Pear paste for cheese

Makes approx. 1.5kg

1kg pears, cored and chopped

1 apple 

Juice of 1 lemon 

250ml water 

500g sugar

serve with Sinodun Hill goats’ cheese and sesame seed crackers

Place the pears and lemon juice in saucepan, and cover with cold water. Bring to the boil, then simmer 15 mins. 

Transfer the pears to a food processor and blend until smooth. Strain the mixture through a sieve, pushing it through with the back of a metal spoon. Discard the remnants in the sieve and transfer the pear puree back to the saucepan. Stir in the sugar. Bring to boil, then keep on a medium heat for 1hr. 

Divide the mixture between sterilised glasses, seal with a lid and label with the date.
